g Anchovy Butter (see Anchovy Butter recipe)
g Parmesan Cheese (grated)
x tsp Chopped Parsley
1. Place the scallops on a grill pan and heat the grill to a high heat.
2. Place a knob of anchovy butter on top of each scallop and grill for 3-4 minutes.
3. Mix the parmesan, breadcrumbs and parsley together and sprinkle over the top of the scallops.
4. Return to the grill for a further 3-4 minutes until golden and bubbling.
5. Serve with a little crusty bread for dipping in the melted butter.
