Grilled Sardines and Stuffed with Rosemary

x Whole Fresh Sardines, (scaled and gutted)
Olive oil
x handful of fresh rosemary sprigs
Lemon wedges to serve.
You can do this dish with butterfly fillets also if you are not so keen on whole fish.

1. Preheat the grill on high or if cooking on the BBQ make sure it is really hot before putting the fish on. Give the fish a clean under running cold water inside and out and then pat dry.

2. Brush the fish with olive oil and season generously with salt and pepper.

3. Use a fish cage if you have one if not just be careful when turning the fish. Cook on the high heat for 3 minutes on each side or until the skin browns and crisps.

4. Serve with lemon wedges.
