Our aim is to supply the freshest fish possible, and the fish we send has generally either been landed on the day of dispatch or the day before that. This commitment is one of the reasons we are unique in not shipping on Monday's - it is too tight to expect to get all species back from market, prepared and sent out on that day. I am sure anyone claiming to do that is misleading and primarily selling fish from the week before.
All of the shellfish is cooked and prepared on the day of dispatch. To ensure this we have a small amount of shellfish tanked on site with a full filtration system - similar to the lobster hatchery on Padstow.
