g mixed sweet and white potatoes - peeled
Cornish Seasalt and Pepper
x large handful of coriander sprigs
x fresh red chilli - finely chopped
x spring onions - trimmed and finely chopped
1. Chop the potatoes and add to a pan of boiling water. Cook until tender (15-20mins).
2. Meanwhile in a large bowl add the crabmeat, the zest of the lemons, chilli and coriander. Mix and season.
3. Add the drained potatoes and mash again till well combined. Divide into patties, and refrigerate covered in cling film - preferably for several hours.
4. To cook, add a splash of olive oil to a large frying pan on a high heat. Add half of the patties and cook for about 5 minutes, turning halfway, or until golden, crisp and cooked through, then repeat with the second batch. Delicious served with green salad and sweet chilli sauce.
