Barbecued Herring Fish Kebabs With Fresh Fruit

Oil-rich fish such as herring or mackerel are an important source of Omega-3 fatty acids. These fatty acids have been shown to have a lowering effect on blood fats.
This decreases the chance of the blood vessels clogging up with cholesterol.
x Mackerel, (scaled & filleted then cut into 2.5cm cubes)

x herring fillets cut into 2.5cm cubes


x 15ml spoon (3 tablespoons) orange juice
x 15ml spoon (4 tablespoons) sunflower oil
salt and black pepper
x 5ml spoon (1 teaspoon) soy sauce
x 15 ml spoon (1 tablespoon) honey
Preheat the grill

1. Thread the fish and fruit alternately onto skewers.

2. Mix together the marinade ingredients and pour over the kebabs. Marinate in the refrigerator for approximately 30 minutes.

3. Grill the kebabs under a moderate heat for 6-8 minutes, turning occasionally, brushing with the excess mar occasionally, brushing with the excess marinade, if necessary.inade, if necessary.

4. Serve with a rice salad.
